Sella basmati is basmati that has been parboiled in the husk before milling, which sets the starch and makes the grain firmer and more forgiving. Royal's Chef's Secret is an extra-long-grain variety that roughly doubles in length as it cooks and stays separate rather than clumping.
The rice is aged in temperature-controlled silos, which is what gives it the dry, fluffy texture and the nutty, faintly floral aroma that Indian, Pakistani, and Gulf kitchens expect. The 10lb bag is the working size for biryani, kabsa, and mandi at family scale.

What does sella mean?
Sella is parboiled basmati. The paddy is steamed and dried before milling, which gives the grain a golden tint, more firmness, and a lower chance of breaking or going mushy in long-cooked dishes.
What is the ratio of water to rice?
For the absorption method use about 1 cup of rice to 1.75 cups of water after soaking. Many cooks prefer the open-boil method, draining the rice when the grains are almost done and steaming it to finish.
How long does a 10lb bag keep?
Stored sealed in a cool, dry pantry, dry basmati keeps for many months. Transfer to an airtight container once opened to keep out moisture and pests.
